Zýme is glad to announce its first Recioto, simply named “Al Mio Maestro…” (to my teacher). 1.176 half liter bottles produced, it’s a blend of Corvina and Corvinone (60%), Rondinella (30%), Molinara (5%) and Croatina (5%). Once dried, the grapes have been processed in concrete vats for 20 days and then aged in 350/500 lts oak Slavonian barrels until May 2017 before the bottling. Characterized by notes of ripe but crunchy fruit, clear cherry, blackberry, plums, blueberry and black currant, supported by a rich spiciness with pepper notes on evidence. In the mouth it is very nice and smooth, the sweetness is delicately supported by light volatile acidity and incredible freshness which strongly increase its drinkability. In memory of the years he spent working with Mr. Giuseppe Quintarelli (from 1987 to 1997), Celestino Gaspari has decided to honor him with this Recioto Amandorlato, a wine missing from the Valpolicella PDOs policy of production, combining perfectly what the great Recioto used to be in the past and Amarone is today: king of the Verona wine production. “I learnt from Bepi first how to make wine, better to say great wine” says Celestino. “I have always loved thinking about winegrowing ethically and respectfully, trying to give back to the vine what I received before, without putting profit and success first, but the improvement of the territory. Only this way you get results and time will make your efforts finally rise up”.
